I have never in my life "played" a visual novel sans Phoenix Wright. What's your favorite VN? Which one do you like feels the most like a video game and less just a book? My perception of the genre is that they're just CYOA books with anime visuals, so I've kinda actively avoided them all my life, but I love point and click adventure games, so if there's anything like that in the VN space, I'd play it.

Just read Saya no Uta, it's short, has zero fat and gets interesting the second it starts. No interactivity beyond choices but who cares it's good I promise, lots of WTF.

Play danganronpa and nonary games if you want a (still relatively basic) vdeogame along the VN. Nonary games (beware the third game is a total meme) is not too far away from classic PnC adventure games so probably a good enough point of entry if you liked those.
If you go telltale, lay Wolf among Us which is the best. It's quite different from the jap games and not usually considered "VN" in subgenre autism. Check Detroit Become Human which controls and presents itself differently but is the best game from a CYOA standpoint.
Stein's Gate is baby's first real VN because it's surprisingly fine but at that point it isn't a videogame anymore. The choices are nothing liek David Cage games, it's basically just pick-your-waifu. Saya no Uta is also a starting point for pure VN because it's good and very short. If you don't like those two, you won't like VN period.

I've found all the VNs people tend to hype up fairly disappointing. Despite the story and characters being the entire focus, they generally aren't remarkably strong in that regard.

My favorite is Spirit Hunter 1, with Cho Dengenki Styker in second, and Tsukihime in third.
The one with the best gameplay is Baldr Sky probably, but I like RPGs more so I liked Kamidori/Amayui even though I had to skip a lot of H scenes to get back to playing the game. People will also recommend Rance and Koihime Muso.
Ones with "adventure" gameplay are things like Famicom Detective Club, Danganronpa, and Phoenix Wright

Full Metal Demon: Muramasa. It has its flaws but it's kino nonetheless. Its protagonist is quite possibly my favorite videogame protagonist of all time.
As for recommendations, check out Raging Loop (and Danganronpa) if you liked Ace Attorney.

I don't like jump scares much, and not because they get me, but because I like creepy atmosphere and slow burns more but Spirit Hunter has actually good jump scares used correctly and it makes investigating the locations actually pretty creepy. Great cast, great story, it's my favorite because it's of a genre sorely lacking in the medium.
I might also recommend Paranormasight, both are good but I like the first one more because it's more horror.
The funny part is I don't like horror movies much. I think they get pretty boring. I love ghost stories in books, audio, and VNs though. Something about the medium of the story matters to me I guess.

He may or may not be a better protagonist within his own story but the setting and overall story prevents him from being more entertaining, to me at least. Okabe's just a regular, slightly autistic guy in modern Japan who wallows in misery over 1 person needing to die for the greater good and eventually manages to find a happy ending that only requires him to sacrifice his sanity for a while whereas Kageaki's an insane, extremely autistic guy who's forced to bear the burden of having murdered dozens, if not hundreds of innocent people, including women and children, all for the sake of killing what is quite possibly the most dangerous person in the world, his very own daughter.
