Modding aside, there aren't a lot of games that even attempt to reach the level of immersive/interactive world elements that Skyrim and oblivion have. Anything that isn't nailed down, you can take. The number of pieces of the world you can interact with for no reason is high. That and the NPC's move and act in interesting ways. It was the next level of CRPG that hadn't been seen since Ultima VII, and hasn't really been seen since. Crimson desert comes close.
