Why so many RPGs (western or japanese) have their premise as "There's an entity inside of the main character, trying to take control of their body and they must resist it's corruption and influences"?

It's not just RPGs, it's fantasy as a whole, many religion have stories like that and they influenced early fantasy stories, and most notably LordOfTheRing. The Ring is just like this. It's a type of story people really like.

the only thing that comes to mind is Breath of Fire: Dragon Quarter, and that's not "taking over" its "killing you"
The Dragon % constantly ticking up to 100% was a time limit imposed on the game, and the challenge was to use your Dragon Powers optimally

BG3 isn't really an entity it's literally just your former self. It's like having amnesia and your brain is like "video games are cool we should play that" just stronger cause you're also the son of the God of murder.
