Anon is 100% LOCKING ON. The "camera boss" only happens when you lock on.

STOP LOCKING ON.

I know the game more or less rewards this, but stop doing it.

I wasn't aware the camera was considered bad. It was fine for me. But I do have additional back buttons on my controller, which I can use to easily lock on and lock off. I also don't use lock on. It's a crutch and lets you do bad rolls.

I thought DS3’s was pretty good. Granted I only lock onto fast bosses and enemies like those outrider knights. I think the worst is Nightreign’s, I try never locking on there.
