Miyamoto hated the peace sign for being too infantile. Mario is an all ages franchise but Miyamoto specifically designed Mario as kind of a cool older brother adventurer hero for pre-teens and teens, hence him being locked to his early 20s, usually being 24. It's also basically why Mario did a hard hypercorrection after Sunshine, with Galaxy being this big bombastic space adventure with heavy orchestral tracks.
