Playing this as my first Fire Emblem. I'm playing on easy but I'm still finding it a slight challenge. I feel like there's gotta be some core tenet to the series that I'm missing. What should I be focusing on/what should I familiarize myself with to understand the game better?

Let the enemies come to you. It's very hard for the enemy to kill Seth even with enemies that have high crit, and the only thing that can possibly kill is him horseslayers, which are few and far between in this game

In neo-nu-FE that would be true but in older FE the Lord is basically a coughing baby that you need to haul around the map because they're the ones that complete objectives. You'll get a lord that can actually fight once Ephraim shows up.
One of the great things about Fire Emblem, especially compared to other tactics games, is that the math is very simple. Just by looking at two units' stats and doing a bit of mental math, you can figure out exactly how much damage they can do to each other in a fight. Of course, when you go to make an attack, the game does the math for you and gives you this information in the battle forecast, but it's often useful to do the math yourself in other situations. For example, if you want your unit to end their turn in range of 3 enemies to lure them in, you can look at each enemy, do the math, and know that enemy A, B, and C can deal X, Y, and Z damage to you. If you have more than X+Y+Z HP, you know that you're safe.

I haven't played sacred stones specifically but I've played a few FE games:Don't try to 1 turn win every encounterLeaving a couple enemies alive but all your squishies safe is more important than trying to kill every unit in range everytime.Learn who's your tankiest unit and use it to bait enemies in range of the rest of your army. Usually he'll take little damage and soften up the enemies that attacked him so you can choose who's going to get the kill for XP

the basics of fire emblem are that you should never hit end turn when an enemy can kill one of your guys and that big numbers always beat smaller numbers. it follows then that you should send out your strongest character with the biggest numbers who has no chance of ever being killed and let him kill most of the enemies. this is called juggernauting and it's a time honored series tradition.
eventually you will unlock the tower which lets you grind as much as you want.also... apparently the trainee units suck? i always thought they were good but never really checked beyond that.
