I thought the 2003 was vastly superior to be honest. It was more melancholic, where brotherhood treats everything like a joke. Brotherhood had pride tip his hand way too early, and the Chinese characters were absolute shit. I liked the "isekai" stuff. See, what no one has mentioned in the thread so far is that the 03 anime actually rewrites EVERYTHING about FMA, even at the start. The structure and progress of the story is different. Instead of Tucker and Hughes being characters the brothers knew for like 1 day and probably a month total, 03 makes it so that the brothers study under Shou for 2 years and have known Hughes for the same amount of time. This gives much more screen time and personal character attachment to both which makes the death with Nina make more sense in the story and why they give a shit about Hughes dying. It's actually one of the few things I think 03 does better than the manga, but it still could've been better.
