What I dislike about using huge modpacks is that they never integrate that well and I like feeling like things are cohesively designed to work together. Not that vanilla is particularly cohesive either, but you're stuck using mods with broad compatibility which means they have to hold back on changes a lot.
I ended up using mostly Starvival as a gameplay overhaul and liked how everything fit together, I'm glad I gave it a chance even when the mod description sounded so autistic. I turned off the retarded adrenaline mechanic but the rest grew on me, I just wish I could try that new spaceship problems mod without conflicting
