There's a reason the vast majority of them have party members, the depth comes from having a set of characters with different abilities and managing their resources. 1v1 limits your options too much. And Pokemon is obviously a deliberately simple game for children so it's not like they're going to add gimmicks with any serious depth.

In that replay there are 5 Waterfalls that could have flinched and 3 of them did. That's not crazy odds though, that's just mildly bad luck since you can realistically expect at least 2 flinches over a set like that. Anyways, the random chance aspect of pokemon should probably mean you do best 2/3 but stall can make games take over half an hour so that just doesn't happen as far as I'm aware.

Switching is a huge part of the strategy in the game.Imagine you had a Blastoise in against your opponent's Arcanine. You could just go for surf, but that's super obvious and he can just switch to Venusaur, shrug off the damage and be in an advantageous position. But if you instead go for Ice Beam which is weak against Arcanine you can hit his Venusaur hard on the switch. But maybe he knows this and leaves in his Arcanine to go for a Thunder Fang. You could even switch out yourself anticipating his switch to get into something that can cover more options than your Blastoise.This is just a very very simplified example of how the game can go. There's a lot to consider here when you factor in different movesets and all the other pokemon on each player's teams, and you can pivot your playstyle based on how the opponent has played earlier in the match.

I really enjoyed gen 7 singles, Megas and Z-Moves were interesting options that had an actual opportunity cost in the form of your item slot.
