If I have a 5070Ti and 9850X3D should I game with a 27.5 inch monitor at 1440p with native resolution, or a 32 inch monitor at 4k with balanced DLSS?

I have 9070xt and it can reach 4k at 60fps on Quality FSR on UE5 slop.
On AC6 it reached 60 without any upscale.

Pretty much everything from UR5 slop like Stellar Blade, to emulating pokemon games.

I really don't feel like swapping monitors depending on the game.

If you look at Metro Exodus, it's 103 FPS at 4k, and 157 at 1440p. So, you deciding between the two resolutions is just a matter of whether you want that extra FPS. Based on the games you named, I'm guessing not, and you should probably just play at 4k.p
I don't even know what 4k looks like, because I play at 1440p/100fps.

Honestly, I'd like to sit at at least 120 FPS even in cinematic AAA titles. But know that's not happening at 4k without lowering the settings a bit.

I'm pretty sure I played Borderlands 4 with DLSS on, because it's unplayable without it, and the game still looked really nice. The only noticeable change is that the game runs at a reasonable FPS. I don't think you should be afraid of it.
