I understand this was never "playable", and that it was all scripted inputs, but how? Wouldn't Irrational have still needed to create the environment for the demo to take place in, model everything and program all of the mechanics? It wasn't pre-rendered footage so what's stopping it from being "playable" in this day and age? It's obvious it never would've ran on the 360 or PS3 but PCs could comfortably run it then (clearly the demo was run on one at the time) and would have absolutely no trouble handling it now.
I'm just struggling to understand how - if they could create an in-engine demo like that - people say it was all smoke and mirrors and that version of the game never "existed" so to speak.
Help a moron who knows nothing about game design out here please cause I can't find the answer I'm looking for anywhere.

There is a movie studio software suite in the industry that is used in place of a game engine. The Last of Us 2 team confessed they used this to essentially fake the game for their demo, that is everything in the demo was made using this software instead of anything in-house. based on how this demo is going there is a good chance they did this for Bioshock Infinite.

Let me explain this to you in burger terms.
The promotional images/videos of food you see in Mcdonalds are faked with glue to make the cheese and sauce extra goopy, paint to make the colors of the ingredients more pop and air guns to make the buns look more full.
The edible form of that burger does not exist. A playable demo of the fake one for Bioshock Infinite does not exist.
Almost all of the "assets" for it were never made to be used in any playable project apart for a handful that got recycled into the actual build like some weapons and the animation of Elizabeth opening a tear.
You COULD remake everything you saw in it from scratch to make a game out of it, but at that point you may as well claim The Day The Clown Cried is a real movie that exists because you could make a full film out of the scant details of the film-script.
