Dragon Quest 1, it's actually quite good. It's interesting that FF 1 is meant to be it's rival, FF didn't make an RPG as good until SNES generation.

I don't know I was thinking persona 3 but, ugh, so much story, maybe I'll try disgaea next

Persona 4
I am distraught because I went and cleared Yukiko's Castle the day it became available and now I missed the mapo tofu in the fridge for Courage.

Is there anything that can top Crystal Project in being a non-linear RPG with good job diversity and skill mixing, yet?
I want a JRPG where I can learn all the passives on one job and put them on another.
Obviously, there's Bravely Default, Octopath, the Final Fantasy games that inspired them, but I'm holding out hope there are some other titles I haven't heard of yet.

I'm also looking for the next Etrian Odyssey (modern).
And then the next Siralim Ultimate.
The next Dohna Dohna.
The next Darkest Dungeon 2.

Basically, I'm keeping an eye out for any modern game that isn't triple-A.

You need a lot of patience for it, between the slow ass battles and 20 minute cinematics.
Wild Arms is more to the point, but give Xenosaga a try if you can stomach it.

Do it. The first game is freaking awesome, and KOS-MOS is one of the best characters ever created.
