Mahjong fight girl

Honestly, I've only extensively played Bomberman Generation and the multiplayer always gave a disc error so I mostly did the story mode.

Bomberman Jeters because it had that tie-in anime

I liked Hero.

Super Bomberman 5

I want to play Bomber girl because of all the mesugakis but I don't want to play a game where skills are locked behind a gacha.

The two NG4 games

Bomberman Max was one of the three Gameboy games I had as a kid so I'm heavily biased towards that.

I genuinely would like to know what versions of bomberman are the best. It's like tetris, it has one billion different versions of the same basic game.
How the fuck do I choose?

Play Saturn. If you like it, just keep picking up any other games that look good to you. Storywise there is basically no continuity, so it's not like there's any lore you're missing out on.
'94, Super 1-5 and arguably Neo are good starting points, too, and you'll often see them ranked among the best. Other games are a crapshoot, but you definitely should not go older than '93. The oldest games before '93 have glacial pacing and do very little to vary up the gameplay, they might turn you off from the series.
If you did not like your first 2D game, try the N64 games, because they're completely different. Hero is a safe bet, because it's really just a standard 3D platformer with a Bomberman skin, but 64 and 64: TSA are more interesting and truer adaptations of Bomberman's core gameplay.

tl;dr Saturn Bomberman.
And whatever you play, skim the manual. Powerups are absolutely essential, but often they're not explained ingame.
