Because people walking away happily into the sunset after winning against all odds would defeat the entire premise of the setting. This isn't hard to understand. You are reading to much into a specific type of Cyberpunk and putting on rails. All Cyberpunk really needs is cyber and punk, the world doesn't need to be an overcooked dystopia. All you need is poverty, counter culture, cool technology and some violence and you have the basic recipe. You can tell stories with any ending you want in that kind of setting, no need to pigeonhole Cyberpunk as a whole just because Pondsmith's version extra dark.

Sign your soul away (literally) which the game (and tabletop) tells you over and over is a horrible idea. Another a simp ending too. It's associated with the worst tarot card as well which the game heavily hints at being accurate in the setting.
>Solo ending (giving Johnny the body)
Johnny gets his complete character arc, learning to not destroy people around him anymore. The engram successfully overrides the brain so there's no inevitable death from brain cancer in the next few months. V embarks on some transhumanist journey.

Solo is the obvious good ending even if his friends hate him at the end. It's the hardest to get for a reason. Not giving up the body just leads to a tiny-bit-better outcome than the Rogue ending.

The whole point of the surviving V being an engram of V in V's body is to get you to think about what it is about yourself that makes you "yourself". V doesn't even realize he's been made into an engram until he's told by Alt. Johnny is an engram but from his own perspective he's alive, he has thoughts and memories (though jumbled and tampered with but how is he supposed to know otherwise?) and full sentience. Yeah you can say the real V is dead and the engram is a fake, but what's the difference if the sensory experience is the exact same.
