emulated a load of PS1 games recently, Tenchu, Shadow Tower, Silent Hill, Medal of Honor, ODT and a few more, was playing them to study their environments and stuff
dropped all of them usually after an hour because they're not terribly fun, even if a lot of them looked nice
on the more recent side, Dusk looks like shit and far worse than any of those games, but I beat it because it's fun
low poly might be an aesthetic pull but most of all I'd say people care about fun. nobody tends to play games they think aren't fun

It's not necessarily low poly that is important to me. I wouldn't call Half Life 2 low poly by any stretch (though it is by modern standards).
I just like clean visuals and simple, sharp textures.
Everything after ~2006 has way too much post processing and temporal effects that it ruins the image quality.
A bit of bloom is okay but they just slather that shit on nowadays and combined with chromatic aberration, TAA, raytracing, film grain, etc, etc and it just looks terrible.

It can but I feel like there's definitely diminishing returns and we've long since passed the point that better graphics don't really increase the enjoyment of a game and if anything the push for photo realism and ray tracing and dogshit unreal engine 5 performance has actually made many games LESS fun than if they were visually equivalent to some 2015 games that ran fine on an Xbox One/PS4.

Most games don't need to be more graphically impressive than The Witcher 3 or Destiny 1, both games that released more than a decade ago. Many modern games are actually significantly uglier than those two despite being 100+ gigabytes more of storage and repairing 10x as much graphical processing power on your GPU.

I would rather more games have ten year old visuals but run at 200 FPS with no fake AI frames needed and without needing a $5,000 GPU than to get a 5090 and still need DLSS to get above 50 FPS.
