The short answer is no one learns to texture paint, which is unintuitive and hard to teach in a way that regular drawing and spriting isn't and not even its own specialty any more since automation e.g. substance painter has expanded that title into "environment art"

It has to do with previous generations using technology and newer generations being totally dominated by technology. so the difference is "how do I do what I want", and "what can I do?".

If you look at the older school devs/writers(even japanese ones) they all grow up with D&D, Tolkien, greek classics etc etc whereas the newer devs(1988+) grew up with video games/hollywood. Many of them didn't have childhoods, many of them never got in touch with anything human.

Also the corporate structures studios are dominated by make it very hard to create anything but *Sterile Product #10000*. So you end up with many people doing jobs, instead of works. What kind of person makes FIFA/AS:CREED #20? not the same person making vanilla world of warcraft.

Cargo cult style fakery can be a good thing if it's used intentionally as an aesthetic to help drive other themes, as is the case in Tunic. In tunic, it's actually beneficial that the "base" game feels very gamey and fake because it makes it feel more natural to immerse yourself in the higher level meta aspects, which is the actual appeal of the game. The same is also true to an extent of Undertale.

The other two are just walmart Great Value Brand versions of products though
