The max survival people want in wild west is fishing. Otherwise everyone just wants poker, black jack, being an outlaw or a sheriff, bounty hunting, duels etc... It's kinda crazy how no one gets it other than R* and the whoever team who made GUN. Maybe some small amount of mining for gold would be okay.
