If it didn't have the head bob, you wouldn't know how heavy your character's steps are, making the suit feel more like gay head gear. Again, it's just immersion.
I think it's a case of game developers experiencing their own games in a fundamentally different way from the end-user, developers spend hundreds of hours in low-res test compiled builds, adding some headbob makes the experience of walking around these barren expanses of unfinished assets feel more natural and you're trying to mimic reality so that has to be good right? and then after a few hundreds more hours you've grown so used to it you forget it's there, that's why you have to take breaks in development and have play testers because you do turn blind to this sort of shit
