As a bonus, go play F-Zero X or GX. Not a relevant franchise anymore, but still some of the best games Nintendo has ever put out.

The Switch 2 is a great console you should get one.

I disagree. TotK is more or less an improvement in every regard except maybe for the story. TotK has more enemy and boss variety, actual caves, better dungeons, better abilities, a stronger feeling of progression, and no Revali's Gale to trivialize traversal.

Kirby start with Nightmare in Dreamland, than Superstar Ultra, if you loved ultra then play the returns trilogy followed with forgotten land. Amazing mirror is bretty good too.
Metroid play Zero Mission, Returns, Super, Fusion, and Dread in this order. Makes sense plotwise and you avoid primeslop.

If you need a Pokemon recommendation, I think GSC / HGSS are the best overall, but a newcomer to the series would probably appreciate FRLG more. Avoid anything from the 3DS and beyond.

If I was recommending multiple games, take the Metroid IP for example, I'd recommend Super, Fusion, and Dread (in that order): but if you had to play one, Super makes the most sense as it establishes the most important aspects of the series and is also the best 2D Metroid anyway if we're being honest.

NTA, but while you should absolutely play it, it doesn't excel at anything in the 3D Zelda genre anymore other than story and maybe music.
Almost every sequel improves upon the formula one way or another, be it combat, overworld, far more advanced dungeons, in-depth advanced boss fights, etc.

Let's face it, as good as the OoT Remake looks visually, it won't mask its primitive design; nobody playing it for the first time today is going to get stuck on the dungeons' puzzles or boss fights. It'll mostly feel like mindless busywork to them.

I guess start with what genres you're into because there's a good chance it was inspired by a tendie game. Like JRPGs? Try Pokemon, Fire Emblem, Earthbound. Like Metroidvanias? Try Metroid. Like platformers? Mario and Kirby. Souls Likes? Zelda.
