most are probably just set-dressing and the loading zone will teleport you ahead of them so you can't visit them. Then again, I have noticed a few other changes in the overworld but only minor shit like bombable walls that weren't in the OG

This, most likely set dressing though seeing how they have redesigned the dimensions of kokiri forest, rearranged hyrule field and kakariko, changed the dimensions of castle town and we can see they have changed dimensions of the accent to zoras domain, zoras domain itself and changed certain things in gorgons cavern, i would expect they would change that area to actually resemble a gate house rather than just gate bridge and empty space.
