It's because if you just crank up the saturation to make everything more colorful indiscriminately you lose artistic direction and subtlety with the moods each scene is able to depict. The game (or movie or whatever) can never choose to dazzle you with vivid colors because oversaturated is just the baseline default that the audience is accustomed to at all times. It's the same thing with music, songs on average have lost their dynamic range over the past couple decades because louder=better appeals to the lowest common denominator.
