Why would you ever want to win? It just makes the game harder.

The more you play you the more you learn the little nuanced mechanics to extract the most value from a run. Learn when you should go for angel/devil rooms, when to gamble and when not, etc. It's kind of a snowbally game too. Getting some good items unlocked helps improve runs on average to be more successful to unlock more items.
