Nobody has problems with spinoffs. Hyrule Warriors did just fine as did your choice of Pokemon spinoffs (Mystery Dungeon, FPS, 'Action' RPG, etc...). People only bitch when the mainline titles are fucked with.
People bitched at Sunshine which is, to my knowledge, the only time the mainline Mario format was fucked around with excepting Mario 64 which was the first time they tried 3D.

Probably because Nintendo's other IPs rely more on the specific gameplay they deliver. It's easy for Mario to be the "every game" since even its core identity feels somewhat fluid.

Mario gets consistent 2d and 3d title at least once a console gen, sometimes more. We haven't gotten a new starfox game since the Super Nintendo. just 2 Spinoffs and remake after remake and a leaked beta of a sequel that got put on virtual console.
