There's more planning involved with charms and effects and elements in MH, but Souls requires better reflexes, at least Elden Ring DLC bosses. There's an element of pattern recognition to both, but certain MH bosses, even in Iceborne, are just not doable with the wrong gear as you'll get DPS-checked to death. Not really, once you know how your weapon works, you can breeze 99% of the shitmons in every game
Plus you have 45 mins to get shit done, unlike souls game, you can bring one billion mega pots, small pots and a shitload of healing items

Not really no. I main Charge Blade. There's resources and stuff to think about it but just with the basics you can be pretty competent.
I might be too arena-brained but I think Hunting Horn is by far the hardest weapon to use well. Not because the weapon is complicated, it's really dead simple, but because keeping monsters in your stupid chain of bubbles is such a pain in the ass. The difference between good runs and bad runs on Hunting Horn is absurd and not always in your control.

they're about the same.
i'd say, monster hunter requires a lot more commitment in your actions, i don't know if i'd call that skill or intelligence, but it's a lot less intuitive. i'd say... the learning curve is less smooth at the bottom, and it tapers quicker since your choices are much lower.

both can be beaten by using a single attack from a single weapon and just learning the boss moveset.

monster hunter weapons have much longer animations and recovery frames, the targeting is primitive, the positioning is less forgiving.
with the fastest and most mobile attack in monster hunter you commit about as much as a heavy attack with a greatsword in fromsoft.
but fromsoft has weapon hardswapping, spells, ashes, you can animation cancel out of most things, etc. the skill cap is definitely higher on fromsoft but it's also more forgiving. something like this chart.

Even so, such souls weapon types are more knowledge checks for enemy movesets, less so learning how to even do basic shit with that weapon.

Pre-World should fit the bill without issue. I've gotten more precise in dodging in MH so I've been able to anticipate more when I started playing Dark Souls this year. Souls has more and more surprises compared to the monster roster in MH, and you have more stamina and resources to work with right out the gate in MH. DS1's endgame will undoubtedly still be a pain in the ass even when I'm all decked out, maybe. And I haven't seen G-Rank in all its glory.

I always saw Fromsoft games as an RPG where you're supposed to swap out equipment and items for every encounter you have trouble with. Whether it's equipping heavy armor and a big shield or taking everything off for better dodges for certain fights. Everyone sees the meme no equipment videos on youtube and treats the games like you're supposed to always do that though for some reason.
