Lightguns and racing making up a bulk. You were less likely to see Japan only cabinents outside of more densely urban specialized places. A lot still featured ticket muncher games, and those have largely went unchanged. A coin a play was pretty standard and it was a lot easier to track spend than with neblous points.

They were magical. You had the carnival/circus element with getting tickets for prizes and the ticket counts weren't that outrageous. I remember getting plenty of army men to set up RTS-style battles with my friend and the real big things like electronics were only like 2000 tickets. Something you could totally score if you hovered over a lottery machine for a few days. Or cheated at skeeball by standing on the ramp like I did. Definitely more of a thing in BR-land and Asia but there was one near me that my family would go to constantly because my Dad knew the owner. All night lan events of CounterStrike Source and BF2 or Desert Combat. CoD4 tournaments where the winner got a copy of WoW and an extra month of game time. Bawls...The early 2000s were a magical time. Not yet totally faggotfied or depressed. Still hopeful for the future. I don't know if it was a regional thing or what, but it's pretty much all we had here and back then it's what I thought "arcade" meant. They'd occasionally have one or two driving games or light gun shooters but never a traditional arcade game. Well, when the ticket counter finally got to 1,000, it said "maximum payout reached, then it started counting tickets I didn't win. I come back 20 minutes later and it's still counting over 4,000 tickets it said were unallowed. The game let me keep playing despite the fact it paid out the maximum. The machine shut itself off for all plays after that. I wasted several dollars while it was counting. What a jewish fucking design.
In high school as much as the jocks, snobs, preppies, and stuck up girls looked down on arcades, every time we went to one as a school trip they had a blast with the rest of us. It was one of, if not the only, school mandated trips where social barriers were lessened and nerds and athletes and outcasts would play against each other in arcade and other games.
