The point of runbacks in Souls games is to increase the stakes of a boss fight and give you a thrill.

Runbacks are not supposed to be annoying because you're not supposed to suck at the game so bad it becomes annoying.
You're supposed to die to a boss once, so that you get the thrill of running back and imagining how tedious it would be to do this all over again. But then you figure everything out and beat the boss on the second try. Occasionally, if a boss is really hard, it can go up to maybe five tries at most. But Fromsoft never meant for you to repeat any runbacks for more than that.
If you find runbacks annoying and tedious, it's because you suck. You're not playing the games right and missing out on the intended experience. They're just a threat to increase the stakes and thus give you a better thrill when you win on the second try.

if you screw up your dodge to one specific attack and die and then see that attack again and again in quick succession, you will learn it too quickly and the fight is too easy

In old from games you’d jog through, say, the blighttown swamp into Quelaag’s cocoon, and form a mental connection between the spider witches and blight town. Placing the checkpoint right before the fight was reserved for climax moments, and implied that this is a culmination of everything you’ve done up to that point.

Now with them cut pasting bosses and the insane overturned encounters everything’s a “climax” and it’s too much work for not enough payoff.

Where are you even getting this from, the number of counterexamples to this dwarfs the number of actual examples. Gwyn, FKA, Manus, etc. all have long as hell runbacks. If you're just talking about the last bosses in each Demons Souls world, I'd hardly call shit like Dragon God a "culmination" of anything.

I will say the one reasonable defense I've seen of longer runbacks is that they keep the level design from being too predictable. There's actually some stress in pushing forward with too many souls since you don't know if you're hitting a bonfire or a boss door next.

They dropped the concept of no run back pretty much entirely for ds1 but brought it back firmly by 3. Frida, SOC and Gael. Regardless, it’s not literally to build hype, it’s a concession that these bosses being hard, final game time encounters, are so difficult that asking for a run back would grate on their players. Over time QOL smoothed their audiences brain and they bitch about any run back at all.

Most runbacks in ds1 are fine. O&S, Quelag, Iron Golem (if you found the secret). Taurus Demon. Even Gwynn.

Problem with Capra Demon for me, is that when you're a new player the fight itself is decided in like 2 seconds. It's a semi-cheap gimmick with the one-way wall, so you basically have 2 seconds to assess the situation and try something, before failing and having to try again.

So it's 2 seconds of a boss fight for every 5 minute runback. Minor complaint overall but I still didn't like it.

Nah. The clams are tedious, sure, but I've only ever lost to seath like twice after screwing up the tail cut on a challenge run. But I can see how it might be frustrating if you were having trouble.

Really the issue for me is that ambush dynamic. Even wheh losing the seath fight, at least you get a fair chance to see the boss and learn from the failure.
