I have never finished a jrpg (attempted Lost Odysses back then, but then dropped it halfway), because as a kid, I thought they're boring. I'm 31 now, slightly less autistic, and want to change my opinion. Where should I start?

Not a must play by any means, but a nice time killer. I'll always be a sucker for job systems.
I enjoyed E33. The sheer apocalyptic mindbreaking it caused /v/, especially with 7R schizos, was simply a bonus.

I'm about done with my NG replay of Xenoblade 2, just have a few affinity charts left to fill then the superbosses to fight. The Switch 2 upgrade to field skill checks is a fucking godsend, that shit should have been vanilla. After that, I'm replaying Torna, then replaying NG+, and by the point I'm done with it, 3's upgrade should be out.

Do any jrpgs have interesting gameplay? I don't care for yet another boring, overwrought story and don't want to spend hours of reading that instead of playing, but I have a lot of nostalgia for OG Pokémon, Golden Sun, and Fire Emblem. I tried e33 but didn't care for it, the story was actually decent but the gameplay was either mindlessly easy or "press X to win" quicktime in 4(3)NIAL form. Have I just outgrown the genre and need to give up the nostalgia?

I honestly think JRPGs continue to be pretty good. Their biggest issue is like with modern games as a whole, which is they cam be a bit bloated. But, I still tend to like them. Lots of good stuff.
