theres so many theories on the next 3d mario in the archives. surely when it gets announced at least one of them will come true?

Pickled eggplant in oil is one my favorite things ever and I always make sure to have a jar of them in the fridge. The recipe is really easy too. You grab 3 or 4 medium sized eggplants, you peel them using a potato peeler, cut them lengthwise into 1.5 inch strands, you cover those with coarse salt and let them rest for 30 minutes so they release the bitter liquid. Then you rinse them under cold water and put a pot with 1/3 red wine vinegar, 2/3 water along with some peppercorns and bay leaves. Once the vinegar and water mixture is boiling you cook the eggplants for five minutes until they're soft, but not falling apart. Then you put them on a baking sheet making sure they have enough space to release the steam. While the eggplants are cooling down you take 1.5 cups of vegetable oil, add thyme, rosemary, oregano, chili flakes and sweet paprika, you also chop 1 clove of garlic per egglant. You mix all of those together. Then once the eggplants are cool enough to handle you start layering them with oil. So you do eggplant, oil, eggplant, oil, etc. Then you let them rest in the fridge for 2 or 3 days and they're ready to eat!
