I've come to the conclusion that I need fantasy game graphics to be a little bit shit for me to properly immerse myself in the game.

I don't know the exact mechanics behind this phenomenon but I do know that I have basically never felt properly immersed into a fantasy game with HD graphics, the shitty looking ones kind of inherently feel more ancient and mysterious which fits the genre better.

The visuals are good, the graphics are a bit rough

I understand what you mean. For me, when I have graphical limitations, I have more fun than if I can run the game maxed out. So now I play a lot of games in windowed mode, and I bring the graphics down to a minimum and make it somewhat pixelated.

That's because only isometric 3d graphics/pixelart gets shadows right. Modern 3D engines aren't able to have a proper light and shadow system. Raytracing is the first time in their history that offers at least the potential to get it right eventually. That is why you aren't immersed. You have only ever played completely washed out 3D games.

I gave Tempest Rising a try and it feels like a love letter to the old Westwood games but the game itself looks very murky and I can almost never tell what I'm looking at or controlling compared to Red Alert or Tiberian Dawn.

Yeah by modern standards but they look perfectly fine to me and I never waste time identifying units, landscape or any other objects. Same with Doom, the old games are crisp the new games are too pretty. My boomer opinion is that most games don't need very pretty or realistic graphics to tell a story or offer good gameplay. Simulators sure but RTS needs fast and accurate info to make the right decisions.

I prefer older graphics in every genre, but I can immerse myself in GTAV for example because the generic modern presentation matches the modern theme, whereas something like BG3 just feels fake

Older fantasy art had a grittiness and fantasticness to it, modern art is cartoonish and bland.
I don't think it's about the graphics fidelity, you could make a game with modern technology that also invokes that feeling.
