For a pure original look, feel and sound, the DVDs will never be beat. The color timing is original, sound is original in the DTS-ES mix and not changed for a faux Atmos sound remix. The original score in DTS-ES is amazing and should be heard in its originality. The sound alone just encompasses you while watching the film. Better then any 4K re-release with faux sound remixes and unnecessary HDR grading. The Blu-ray is a close 2nd if they didn't change the color and de-enhance the sound. I'm sure there's a fan edit somewhere, that brings back the original color grading.

The anti-soul gas exists to hide low LODs in distant objects. Look at mods that remove it from MH wilds for example. Distant objects are actually way lower quality than you imagine and the fog just makes it harder to tell.
Not defending it of course it looks like garbage, but the solution isn't just disabling the fog because it would still look bad, they would actually need to do a lot of optimization work.

It's arguably not as bad as in TotK since OoT has a lot less items but there's a ton of other ways to do it. Skyward Sword had an item wheel like that other anon mentioned for example. They could have also made it closer to the original with the 3 item slots tied to the C buttons but you could cycle through items on each button instead of only ever having access to one at a time
