Anime fighting games are extremely dishonest. They make it look like the series they're based on has a huge cast of characters, but most of them are useless or irrelevant jobbers with so little screentime that their moveset is made up and they don't do any of that in the source material.

"You can play as scrimblo bimblo from episode 30 who had 10 seconds of screentime" is not a selling point.

You clearly have never been part of an actual fandom nor been a fan of anything - you sad shell of a human, forever wondering about what happiness could feel like.
Because that's the kind of shit that DO get people hype.
Case in point, our neighbor /mlp/ managing to have entire threads on characters with *no* dialogue just because they did a funny face once in the background.
