If an older Donkey Kong game were to be remade, would they go back and change the older DK design to reflect his current look? Would they have us running around in DK64 and DK Jungle Beat with the Switch 2-era look for DK?

Yes and I don't have a really good answer why.
Some will say it's to have brand homogeneity with the movie redesigns but Bowser, Mario, Luigi, etc. have not had their design language overhauled in a similar way. Peach got a special cover in Showtime! to match the movies but her in-game model is still the usual design. Even in Bananza Cranky, Diddy, & Dixie looked like themselves. Only DK substantially changed.

I'm surprised they didn't use DK's new design for Universal. Interestingly for USJ and Epic he has different designs for his old look.
