What the fuck is it with dragons and taking permanent residence in human castles or structures just so they can horde treasure or burn and eat anyone that crosses their path? Are they just assholes?

Dragons tend to have connotations of greed, destructive impulsiveness, and possessiveness. Castles in medieval times are often, but not exclusively, holds in which large amounts of wealth or power are held by local nobility. By assaulting and controlling a castle, a dragon is showing it's superior strength comparative to the local population. Tribute and possibly worship soon follow.
They view humans as nothing but pawns or food. They roost in places far away then eventually end up destroying the ecosystem or human villages and kingdoms. Reminder that Erebor was once a sprawling kingdom that traded and contributed to the rise and success of both several human and dwarven areas until ONE dragon ruined it, and he was the runt of the litter. They are meant to be slain. The only good one is a dead one.
