For me, FFX is the best entry in the series by miles. The first hour or so is pretty slow but after that it's just gripping the whole way through. Great story, great characters, one of the best settings in vidja.Didn't care for the games that came after since they dropped the turn-based format. Never tried XV or XVI so can't speak on them.FFVII was boring as shit. I made it to the part where you have to crossdress and dropped it, absolute shit game and the fans are delusional but I get it being impressive for the time. I liked VIII and had bought it new, but for some reason disc 3 was broken out of the box and wouldn't boot so never got to finish it. Never played IX, but plan on doing that soon.2D ones were fun but the stories were pretty basic and left a lot to be desired. ffx has the best story/protagonist/set pieces, its the best FF in terms of cinematic aspects, I would go as far to say its the best story in any JRPG as long as you ignore the X-2 retconning faggotry. But the gameplay is too watered down to call it the best and any real fan of the series easily sees this. A FF game without a world map, without real dungeons, without any sense of exploration can never be the best FF. VI/VII/VIII are nearly as good as X in terms of its story/characters/setting, while blowing it away in terms of being an actual FF game that doesn't put you on rails the entire time until you reach a super shitty post game.
