There's some issues with combat that are being worked on. Openmw is actually easier than vanilla because npc's have a cooldown between attacks while in the original they swung as fast as their weapon allowed. I think the next release is going to implement a fix that brings it closer to vanilla.

It's the other way around. Enemies in OpenMW have lower hit chance than in Morrowind because they spend much more fatigue in combat.

Well you can do that, but OpenMW is a new engine for Morrowind data files which allows you to do things not limited by a 25 year old game engine: more than 8 light sources, borderless Fullscreen, and more importantly promises to be a open and seem less engine for modding and scripting. So you don't need OpenMW to enjoy the game but as long as the small engine changes don't trigger the 'tism it is generally an improved experience, and the base in which modern mods are designed around

No, that's the best way to enjoy vanilla. You might want to add MCP for some bugfixes, but keep in mind it has a bunch of gameplay and balance changes mislabeled under "bigfixes" that's on by default. But it's modular so you can disable every change individually, unlike OpenMW's gameplay changes, many of which can't be disabled.
