I'd say do what you want with those, but burning is probably slightly more useful.3* servants give Mana Prisms which are quite useful in the shop, so I would advise 6th copy onwards of 3* servants you should burn.4* and 5* servants give Rare Prisms when burned, which are even more useful. Definitely do not use these for EXP, as Rare Prisms are fairly limited in availability and directly lead to more Saint Quartz earned in the late game (Rare Prism shop -> monthly Chaldea Flames -> Another servant you can bond past Lv. 10 -> 30 SQ reward for each one)
