The latest steam version is 1.6.1170 and the latest gog is 1.6.1179, a slight difference in the exe. The only consequence of having a different exe is for skse based mods, conventional mods don't care whatsoever about game version. In the past when updates were still rolling out some skse mod authors did not maintain a gog compatibile version because it's more work for them, but I can't think of any off hand today that still have that issue. certainly all of the most important skse mods will have a gog version by now.

I do, so I use it for many of my characters, but you need to have a patch for every outfit, of course, you'll most likely use a clothing/vanilla armor replacer, and for those you just need one patch each, not one for every piece.
