Halo CE? Halo 2? Halo 3? Reach?

It's all pure artistic skill.

Most of the models are very basic (by today's standards), and are only covered with a simple "photo texture".
Some were given a basic Bump map + specular map to give more glossy, metallic vibe, but nothing fancier than that. Water has some simple Planar reflections and refraction, that was old news at the time as well.

All that's then coated in mostly pre-baked lighting, with some dynamic light sources. Smaller, self-contained "rooms" obviously help keep the things within the console's RAM budget.

Because strong hardware limitations breed invention and polish.

Halo CE was one of the earliest games to incorporate bump/normal mapping

Halo CE had bullet casings looked like real metal shells, didn't disappear quickly but remained on the ground for a long time (nothing cooler to see tons of bullet shells scattered everywhere after a fire fight), and watching them realistically roll down hills.

Specular on bsp is all kinds of broken in Halo 2, different ways depending on version of the game. Bungie disabled it on many surfaces because of this. In MCC it has a broken directional computation, in Vista it just doesn't work at all

Halo 2's maps were so big the original Xbox couldn't handle it. Containment is the biggest map in Halo 2.

Halo 3 ran at 1152x640, it wasn't even 720p

ODST didn't have any rain because the engine didn't support it

Reach's motion blur technique, like in Tekken 6, works on an individual object basis

Reach is Bungie firing on all cylinders. The best campaign mission sandboxes and IMO the most interesting enemy encounters in the franchise. I also love the UNSC Army faction design, which is both grounded and also futuristic. I love that the game has a more serious tone, and that it plays out like a tragedy with a very strong conclusion rather than leaving you hanging (the freedom of knowing you're not making a direct sequel I suppose). Plus Firefight and all the custom game modes rocked.

The game got way too much hate from the Halo 3 MLG scene for its multiplayer changes, and it's a shame that "serious professional Halo" was at its zenith at the time because the game is phenomenal even if it messed with the Halo 3 multiplayer formula.

It's important to have the correct mindset about campaign v multiplayer. That being that a true Halo game is a campaign experience first and foremost.
I'd be perfectly fine with the CE remake having firefight or some other PvE mode as its "multiplayer" offering for this reason.
Halo CE/1 had multiplayer thrown in the game in the last few months of development for the same reason any multiplayer was in a console game at the time, it was just expected to be there. The campaign WAS the game, and the multiplayer was extra. Now, it did turn out to be really good and pretty addicting, but it's important to understand that this existed in mostly a party game atmosphere. Yes, there were comp tournaments, but they are not representative of the average Halo CE multiplayer session.
Halo 2, or really rather Xbox Live, changed this, and set this unrealistic standard of Halo multiplayer being the face of the series. It was never meant to last, but it stuck, even as CoD 4 and onwards drained the popularity 3 years later.

tl;dr
A PVE-only game is sorely needed at this point to correct this wrongdoing and artificial ballooning of Halo's multiplayer to be its core identity.

My guess is removing these features from the engine would take much more effort than leaving them as is. But Assassinations should definitely be in the game. With skulls, you also have more weapons that have been associated with dual wielding in the past than Halo 2 did on release (Magnum, Needler, Plasma Rifle, Plasma Pistol, SMG and Spiker).

Halo 2 maps with 8 player FFA was fine back then. At one point I think Halo 3 had 8 player FFA which was also fine (Better than 5 for sure), but I would have been happy with 6. Once it dropped back down to 5 it felt empty/slow, like there's nothing going on and every fight is just 1v1 or running around looking for people to shoot. Same with Infinite's maps even though they added sprint. It just sucks to play with only 4 other people. Half the fun of FFA is being able to get cheap kills or dying to some asshole that happened to be near a rocket so he got a triple kill on you despite all the hard work you put, but it also meant not investing too much into that much which should be fine for a noncompetitive mode. But even though you get unlucky during a match, you can also have a chance to get lucky and be in the right place at the right time. If you want perfect even luck and balance, there's ranked 4v4 or 1v1 on symmetrical maps. FFA is all about luck and dealing with the cards you're given. Halo is babby's first fps anyway, you don't need to get hung up on skill and competitive, especially in a non-ranked mode. We have counterstrike and Quake for the real sweaty stuff. You also have ranked, which is fine for what you want (5 players) but for a nonranked mode I don't see why you can't bump the number of players up at least to fill out the maps so they don't feel so empty/boring.

There's no point in trashtalking when no one is around. If you want a battle royale on a big empty map, maybe they can make a separate mode for that.

The Flood is such a dogshit book compared to Fall of Reach and First Strike. The only mildly interesting parts are the ones with Yayap and Zuka 'Zamamee, but even them are very barebones compared to other villains from other books.
The book even manages to make the Flood feel boring. It just goes on and one about the different forms of the flood and how Chief dodges and dispatches them.

I was going to recommend you Rubicon Protocol but I don't find that a good entry point. And if you didn't a book focused on war, and you prefer human characters... well.

I would recommend you starting with Halo Escalation. You can skim most of it pretty fast. Then try this trilogy (pic related)
It focus on human characters, albeit the main character is a bossy female (but she has the fucking right, considering she's the daughter of John Forge), you need to be ok with that, and a fun adventure in space. They visit many planets and cities in this one. Loads of ONI motherfuckers, Covenant remnants and forerunner tech.
I'd say, Rion Forge is the closest to Han Solo this franchise had.

This trilogy explains a lot and ties with Halo Epitaph, which ties with Empty Throne, which ties with a lot of the plot lines from current Halo. And when I say "a lot", holy shit do I mean it.

Also I want to say 12v12 is good but the issue is that I only have Infinite for reference which uses sprint, and the extra mobility plus the faster vehicles don't give a clear answer. The maps are also designed to funnel players into certain chokepoints so even though the maps are bigger and there's more players, the fights still feel small like Team Slayer, espeically in base big team battle. Big Team Heavies feels more like a proper Big Team Battle mode for Infinite specificially. Where as the maps in 3 and Reach are sometimes too small for the heavier vehicles.
