A rundown:
Bronzebeard is Warcraft Reborn, which is their take on Classic+. It's Vanilla WoW, on the WOTLK engine, with a bunch of enhancements, new locations and quests, etc. IDK anyone who still plays this though because of the below options.
Vol'jin and Rexxar are CoA. That's Conquest of Azeroth, which is that but with 21 new original classes loosely based on Warcraft lore. Each one has at least 3 specializations, and skill tree systems from Dragonflight have been backported into it. Came out not too long ago, and World Peace is here.
Dawnrise and Darkmoon are Classless Freepick and Wildcard respectively. You either selectively or semi-randomly assemble a custom class based on a mish-mash of skills from other classes. This has seasonal resets, so what just launched is Season 10. I don't think we have a guild here yet.
Area 52 is a persistent freepick world, currently on TBC.

Other servers:
Turtle WoW is dead, but used to be the GOAT of Vanilla/Classic+ pservers.
OctoWoW and Capy are based on its foundation, with Octo striving to continue where they left off. Branded is here.
Chromie is just WOTLK pretty much with some minor adjustments. Tang is here.
Tauri is a pserver running the Legion expansion. I think this is the newest I've seen anyone turn into a pserver. Blizzlike. gulag is on this.
Maelstrom is a vanilla-thru-WOTLK progression server. Apparently Anime Mafia is a guild here, but I never see anything about it. Probably dead af.

You can play totally without giving them shekels, but there are things they sell in the store like big bags, specialization slots, cosmetics, etc. I think due to the fact that Ascension is actually getting sued though, on your first character on Vol'jin and Rexxar, they give you a big cache with a ton of that stuff for free. On any character the second spec slot is 1000 gold, same rate as in Wrath.

They are quite generous on the CoA server giving you $100 of stuff that are necessary to play IMO, like multi-spec, bag/bank space. And also giving you lot of other things that also shouldn't be in the game, like unlocking all flight paths, retail mount at lvl 5, book pet to learn professions or spells, might be forgetting some. You should know that everything one can buy with real money can be sold by them in game, effectively gold and real money are interchangeable that means that someone playing f2p can buy shit if they spend time farming. Things like auto loot bot are almost necessary, you will likely want xp pots and xp auras, heirloom gear and so on. CoA is a bit more f2p friendly, but something like wildcard is not. On Ascension's servers they also like to have BiS items behind professions, that basically mean that you need a lot of gold (and again that can be obtained with real money) to get the best gear. Most of Ascension's servers are what I would call fun server. They are some short lived, broken balance for quick fun before everyone abandon it. It's kinda similar to a season in retail wow, although a bit shorter. Octowow is more like vanilla wow, with only a few modifications to fix broken/bad part of it, it's slow, turtle wow for example lived for 6 years and still had plenty of people regularly playing and joining it.
