What I do is use the standard quality (no star) produce for cooking, sell the silver quality crops, and save the gold/iridium for gifting and putting in the grange display. If I have over 100 of a gold crop then I'll sell the excess. This makes it easy to keep track of for me.

I'd rather have the money early game. You do want to keep some gold star produce for Community Center bundles, and for your grange display at the fair. It's better to have a variety of high quality goods than just stacking it with produce, though, so you really only need like 2 or 3 gold star cash crops (pumpkins or melons work).

I always feel like animals are a pain in the ass, but then when I try doing a run with little or no animal investment I miss the regular income from animal products. Without a couple chickens and cows to give you that steady, incremental wealth you're broke as fuck waiting on the cauliflower / melon harvest, can afford tool or backpack upgrades without finding the time to haul 20+ fish out of the water in a day to score a few thousand gold. I'll never complain about having to pet the chickens every day again.
