How is this relevant?

You said "Mojang seem to think Minecraft is medieval". No they don't, that's retarded. If they did, they would have removed those old features that don't fit the medieval thematic. The reality is that Minecraft's setting is purposefully kept vague and anachronistic, and offers blocks that can be used in a variety of aesthetics, including but not limited to medieval.

those would be the biggest additions off the top of my head but they tweak smaller mechanics/add functionality to stuff decently often

observers are definitely the most powerful thing they've added since 1.5 though

copper bulbs are fine for like, being a more compact thing we could already do, thats about it. the thing they had in snapshots where they were on offset ticks was cool
observers are far and away the biggest addition to redstone, i was kinda scraping the barrel beyond that. slime blocks (and by extension honey blocks) are cool but not observer level
the crafter is cool though its implementation is finnicky in such a way that its only real practical use is condensing/processing farm outputs
sculk was also a thing but that was a huge nothingburger for anything other than traps, which are pretty niche to begin with

It's relevant because Mojang aren't going to remove old features, even if they wouldn't add those same features today. And even if medieval is a stretch, it's very obvious Minecraft isn't set anywhere close to the modern day. If Mojang wanted to add some tool to measure distances between two points to help builders, it wouldn't be a laser rangefinder. It would be some sort of compass that shows the player's current distance from a loadstone

I'd argue lecterns and calibrated skulk sensors are also pretty useful as well. lecterns for easily generating an exact signal strength to compare against, and skulk sensors for triggering things wirelessly

kek sculk. it's just so utterly useless even with the amethyst sculks and stuff. there's already a significantly better infinite distance redstone transfer method (multiple, really). and i've never ever seen it used in any of the most compact machines/setups.

lecterns are really nice for calibrating things like a rail network or an elevator, as it's like having 15 different options the user can choose from easily. they don't add anything new inside of circuits though because you already have easy access to all 15 strength with a barrel and some shovels, but it's great for ui.

I think that's fine. Most people just want a quick way of turning slime into slime blocks, or bones into bone blocks. And for those that want to do more, they're likely the sort of people who'd enjoy the extra challenge

it's because gnembon implemented it, so it was always targeted towards the much more technical players

a universal autocrafter is a fine addition to main storages. it's good for crafting like a shulker box of pistons or something. if you want multiple shulker boxes of pistons though, manually crafting (with a mod, of course) with a dolphin powered system is still way faster. but it's a fine fun doohickey for the vanilla purists and those that don't want to do the dolphin thing, or have no use for tens of thousands of crafted things.
oh, but like i said though technical players all use mods and dolphin autocrafters becaues they need 10s of thousands of things, and the craft is not good enough for that. they're the ones designing stuff like universal autocrafting setups but they rarely use them on the big tech servers.

One of my biggest complains I have with this game is pets, like they don't do anything, they should have 3 modes, one being the classic sitting, another being the classic follow the player and third being able to roam around and do whatever the fuck they want, like make make pets walk, run, play in a range 40 blocks from a specific point or special block, it is boring to tame a pet and then make then just sit there and nothing. Make them feel alive.

pointless bitching ahead

i hate how they destroyed the lonely, isolated, uncanny atmosphere which old minecraft had. agnes wants to make minecraft more friendly and uwu, she's gonna add a billion pointless happy mobs, happy ghast, happy foxes, happy sniffers, happy baby mobs, happy feet, happy whatever. old minecraft had that cool feeling as if you are literally the only entity that was actually conscious in that world. in new minecraft there is a village every 500 blocks, tons of structures with intelligent design behind them, remnants of old civilizations, currently occupied settlements, etc, the world feels much more lived in compared to old minecraft where there the smartest entity in that huge world other than you was perhaps your silly dog. the only signs of life was you, dumb passive mobs, even dumber hostile mobs and plants. it was so oddly comfy.
i don't know, maybe there is some datapack or a modpack that recaptures that precise setting and deletes all the "smart" mobs and structures, but it seems like new mojang's goal is to take the game in the completely opposite direction to that and make it as friendly and approachable as possible rather than the old lonely and raw survival. it saddens me.
i know that you can disable structures but it's still not the same, it deletes so much of the content that the game has it's kinda not worth playing it and there's still stuff like wandering traders and pillager patrols, hence my desire for a datapack of some kind.
maybe someone made something like this already, preserving that classic lonesome spirit whilst also somehow incorporating at least some of the new features
