When you get your first level 1 ultimate skill, you choose which one.You can also switch your ulti at any point, if it's not on cooldown. If you're worried about performance, use the Reef's Edge terrain. You'd think that it would be horrible for performance because of all the visuals but the terrain doesn't have a river and not rendering it really helps fps.
