The problem is that the games don't actually try to make it consistent in the first place. You say mobians aren't a fantasy race, true. They're multiple fantasy races. Echidnas are explicitly treated as a unique fantasy race with a culture. Knuckles isn't just aesthetically an Echidna like an Arthur character, he's part of the "Echidna race" and repeatedly said to be "the last of his race" meaning the animals are considered races.
