When a fight is done optimally, the healing requirements on bosses vary greatly. Compare something like Sapph and Grobbulus for example. If you want to kill Sapph, you need to bring more healers than you'd require for Grobb. Hence you'll parse low even with an optimal amount of healers on Grobb, because your raid isn't exploding on others or standing in shit, while some other people are. Second, not all healing is equal. Aoe healing allows for higher throughput and efficiency. So in a fight where mainly the tank is supposed to take damage because rest of the damage is avoidable, your throughput and efficiency will be limited. On the other hand, a raid with shitters where everyone takes damage allows the healers to aoe heal, resulting in higher overall throughput even though they have more healers.
