For a lot of people, leveling and gearing is the best part of XI. They can always makes alts but when everyone is at the same page again, it hits differently. The dynamics are different when no one has any gear or gil and has to work together instead of having a max level friend help them do everything.

Needing to find a group of people to go do your AF quests, limit breaks, and missions together is really a completely different experience and it's one that doesn't come along often.

Finding 5 like minded people is hard outside of servers being brand new, the gear difference makes those fights harder as well early on when people have nothing other than some conquest gear.

The fresh starts are always cool if there's a decent population to back them up, it's a dynamic only available at the start of a server. That time when everyone has to use airships and chocobos because outpost warps are down is comfy too, it's a shortlived experience and while you could do that right now on the other servers, you're a jackass holding up the entire group for doing so.
