The emulator RMG-Gekkonet has implemented rollback netcode to every N64 game:

Right now it only supports 2-players for rollback, 4-players still uses delay netcode but the devs are working on making it compatible with rollback.

The emulator devs said it and Mortal Kombat 4 have that and framebuffer issues right now but they will be fixed in the next update.
What I'd like to know is that if there's a way to use a save file for online play, games like Diddy Kong Racing have everything locked unless you beat the game.
