So do all trainers ride bikes or is it just some of them? What does the economy for bikes look like in Kanto vs Unova compared to somewhere like....Johto or even Alola?

Pokemon currency(Pokedollars is not an actual term) seems to be based on value of yen ~1996.
1 million yen in 1996 is around 8200 usd today.
It's still a lot for a bike, but some fancy high-end sports bikes can easily reach this kind of prices.
