I'm new to this, and I never really cared much about Pokémon until very recently, when I discovered my favorite Pokémon (Alcremie). So... I'd love to know the right order to play the games in.

Leaf Green is the best starting point.
Black/White 2 are the GOATed entries. You don't need to play B/W 1, the stories are separated by years and completely independent of each other. They're just in the same region.

That about covers it. Gen7 onward is slop for millennial corporate zombies that you don't really need to touch.

Unless you're autistic I wouldn't bother. Pokemon is a series made for people to hyperfixate unhealthily on, if you're not tism touched, you'll grow bored of it very quickly. Also if you only care about Alcremie then SwSh and/or SV would likely be the only games you'd really want to give a go, otherwise just play what you want, it genuinely doesn't matter. The Kanto to Johto games (eg RBY to GSC or FRLG to HGSS) and BW to BW2 are the only direct sequels. Everything else is about as connected as a Zelda game.

In this order, these are must plays I'd say. Platinum is alright, not a fan of gen 5, gens 6 and 7 are also playable
8 and 9 gen games are very, very mediocre, except Legends Arceus imo

If you have a Switch, it's easiest just to recommend the latest games. If you're specifically looking to play with Alcremie and it's pre-evolved form Milcery, it's only available in Sword/Shield and Scarlet/Violet (DLC purchase and major story progression required to access spawn area.) Alcremie is also available in the free to play Switch and soon to be mobile Pokemon Champions, but that is focused solely on battles. Someone can trade you an egg if you want one near the start.

If you're talking using an emulator to play old games, you run into a bunch of cynical people convinced that all the Pokemon games released after the one they had as a kid is the worst ever. They will point you at rom hacks designed to make the older games harder and/or edgier or that include all the pokemon available at the time. The original Gameboy games (Red/Blue(Green in Japan)/Yellow | Gold/Silver/Crystal) and Gameboy Advance (Ruby/Sapphire/Emerald | FireRed/LeafGreen) games were the simplest in the terms of programming and there are hacking communities around those versions.

Gamefreak themselves view FireRed and LeafGreen to be superior to the original Pokemon Red and Blue so that's probably not a bad starting point. Its sequel Gold and Silver also got remade as Pokemon HeartGold and SoulSilver. Those are both highly regarded entries alongside Pokemon Emerald and Pokemon Platinum

Mystery Dungeon 2 Explorers of Sky is the best Pokémon game.
Then play Super Mystery Dungeon, Gates to Infinity and the original Blue Rescue Team.
They are roguelikes and the gameplay, stories and, except for GTI, post game vastly beat the "normal" games.
And you can search treasures and hunt bounties which is a lot cooler than dogfighting teampark.
They are very good entry levels games to the roguelike genre in general because they are more forgiving than something like DCSS or Caves of Qud, but still not as baby easy as the mainline games.

That's it, you can become a Pokemon expert with these games. Just take a break after a couple of games, go play or watch something else, then come back for more, you'll avoid burn out that way.

You can explore spin-off games after that, the anime shorts are great (like Pokemon Generations), and the manga Pokemon Adventures is consistently entertaining as well. Just avoid the mainline TV series (the one with Ash).

While Platinum was an enhanced re-release of Diamond/Pearl, the latter also received an outsourced remake for the Nintendo Switch, Brilliant Diamond/Shining Pearl, which I didn't recommended for the sole reason of its chibi characters outside battle being subjectively ugly, but that's an option too if you don't mind them and/or can only play on a Switch.

If you can only play on a phone that can't emulate Nintendo DS games well, then you can play Crystal instead of HeartGold/SoulSilver (the latter are remakes of the former)

Play Red or Blue if you want to start with the OGs, Yellow if you want a more "anime" feeling.
Crystal for Gen 2, mainly because you can catch all Legendaries (except Celebi, unless you are playing the modern port).
Next is Ruby and Sapphire, play Emerald when you get a feeling so you challenge yourself with the Battle Frontier.
Play Platinum, no exceptions. It has the full Sinnoh dex available.
After that, is up to you.

Pokopia is all you need, though it doesn't have Alcremie yet IIRC.
If you want a mainline game, BW/2 are the best 2D ones, 3D ones is a pick your poison situation.

Starting with 8-bit games is simply not attractive for newfags, it feels too boomer-ish.
That's why FRLG are good recs, they strike a good balance between still being decently faithful but not feeling as old.
