Always liked Sootopolis. Though honestly I can barely remember most gyms throughout the series. SWSH had that pachinko one that I was sad you couldn't replay and Opal's quiz was a funny troll.

Visually one of the coolest looking gyms. Don't recall the puzzle being particularly interesting.

Sunyshore, Snowpoint, Mossdeep, Sootopolis and Blackthorn (gen 2 version is better but i also like gen 4 one)
