I wish split evolutions was more of a thing in the series, so many pokemon could had tons of different evolutionary paths that explores their design and concept in different ways. It could fix the problem of people not liking a certain evolution but they may like the other

Specifically I wonder if there's a more donkey-like Rapidash alt. Feels like something that would have been perfect in gen iv to increase the number of fire types.
That and making heatran a three-stage psuedo-legendary.

I’ve had this idea in my head for a while about a hypothetical Unova or orre Pokémon that’s based on a mix of an American bumblebee and a cow. The final evolution would be called bumbolvine and it would be a bug normal type. They would look like big fuzzy, stylized bees with cow-like features, such as horn-like antennas, as well as very pronounced wings. Their main method of attacking would be using their wings to produce sound based attacks, like bug buzz, uproar, hyper voice, and, eventually, boomburst. They would also get quiver dance at high levels to reference how bees use dancing to communicate. Stats wise, they would be slow, bulky special attackers. They would also have male and female forms, with the special attack and special defense being swapped for each.

If you are still looking for moves/abilities for this mon: I would suggest Levitate as like a hidden ability because seaweed is so buoyant. Another idea is Tangling Hair because this thing is clearly a vicious predator, using their leafy fronds to ensnare their prey and drain them of life energy.

Not exactly the same, but I have thought of starters that would remain monotype for the first two stages, but then you could evolve them with specific evolution items that would determine their secondary types. Like for example you might have a pure Grass type starter that when subjected to as specific evolution item, turns into a Grass/Fighting type evolution, and then with something else it'd become Grass/Steel, and with a third, Grass/Fairy.
All three starters would have three different options, and their stats would change accordingly.
Like maybe the Fire starter could be evolved into a physically offensive Fire/Fighting type (just an example, don't kill me), a specially offensive Fire/Psychic type or a fast mixed attacker that's Fire/Dark instead.
And it'd be cool if the three options that each starter has could for a type triage themselves. Like Fire > Grass > Water > Fire, the secondary types of Grass could be the aforementioned Fighting, which is strong against Steel, which is strong against Fairy, which is strong against Fighting again.
There's a bunch of these triads, like Psychic/Bug/Poison, Fighting/Rock/Flying, Ice/Ground/Steel etc.
It would be a great way of fitting your starter into any team composition you'd like to, like if you don't want to have duplicates and you really want a specific Fairy type and another specific Fighting type later, you could go with that Grass Steel just because of that.
Or maybe you already have a good physical attacker and a good specially defensive Pokémon, so you'd evolve your Water starter into the one that's physically defensive and specially offensive instead of the other option where those stats are swapped.
Also, would be great if these starters would always have an abilities that fit their new secondary typing and enhances their specific niche further, but these abilities would also differ from each other and serve different purposes, lending for even more customization.

Like instead of Serperior just being a snake, have it keep its arms and legs it had as a Snivy and Servine. Plus a secondary typing.

Makes it more fantastical/monster like rather than just being a duck, plus it's based on a duck boat so they kinda work as stand-ins for the wheels.

Most of time you can't tell when pokemon is stone evolution without knowing beforehand. I do prefer it how Eevee does it, when the evolution is a complete type change. For example Cubone using a Fire Stone to evolve to Alolan Marowak going from Ground to Fire/Ghost but have it be a new pokemon entirely instead of just a regional form

Starters with split evos should be their whole gimmick, not an afterthought.
